Ingredients:

  • 8 oz cooked lobster meat, chopped into 1/2 inch pieces
  • 8 oz lump crab meat, drained and picked for shells
  • 1 tbsp fresh lemon juice
  • 1/2 cup Panko breadcrumbs
  • 2 tbsp mayonnaise
  • 1 large egg, beaten
  • 1 tsp Old Bay seasoning
  • 1 tbsp fresh parsley, finely chopped
  • 1 clove garlic, minced
  • 1/2 tsp Worcestershire sauce
  • 1 tbsp olive oil

Instructions:

  1. In a large bowl, gently fold together the lobster meat, lump crab, lemon juice, and Worcestershire sauce.
  2. In a separate smaller bowl, whisk together the beaten egg, mayonnaise, Old Bay seasoning, minced garlic, and chopped parsley.
  3. Pour the binder mixture over the seafood and fold gently with a spatula until just combined, taking care not to overmix.
  4. Line a baking sheet with parchment paper. Use a 1/3 cup measuring cup to scoop the mixture, packing it tightly, then flip the cup onto the baking sheet to form round cakes.
  5. Lightly smooth the edges of each cake with your fingers to ensure uniform height for even cooking.
  6. Preheat the oven to 400°F (200°C). Using a pastry brush, lightly coat the top of each cake with olive oil.
  7. Bake for 20 minutes or until the exterior is mahogany gold and crisp.
