Ingredients:
- 8 oz cooked lobster meat, chopped into 1/2 inch pieces
- 8 oz lump crab meat, drained and picked for shells
- 1 tbsp fresh lemon juice
- 1/2 cup Panko breadcrumbs
- 2 tbsp mayonnaise
- 1 large egg, beaten
- 1 tsp Old Bay seasoning
- 1 tbsp fresh parsley, finely chopped
- 1 clove garlic, minced
- 1/2 tsp Worcestershire sauce
- 1 tbsp olive oil
Instructions:
- In a large bowl, gently fold together the lobster meat, lump crab, lemon juice, and Worcestershire sauce.
- In a separate smaller bowl, whisk together the beaten egg, mayonnaise, Old Bay seasoning, minced garlic, and chopped parsley.
- Pour the binder mixture over the seafood and fold gently with a spatula until just combined, taking care not to overmix.
- Line a baking sheet with parchment paper. Use a 1/3 cup measuring cup to scoop the mixture, packing it tightly, then flip the cup onto the baking sheet to form round cakes.
- Lightly smooth the edges of each cake with your fingers to ensure uniform height for even cooking.
- Preheat the oven to 400°F (200°C). Using a pastry brush, lightly coat the top of each cake with olive oil.
- Bake for 20 minutes or until the exterior is mahogany gold and crisp.
