Ingredients:

  • 1 cup pumpkin puree
  • 1/2 cup pure maple syrup
  • 1 cup unsweetened almond milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1 tbsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 cup raw pecans, roughly chopped

Instructions:

  1. Set your oven to 350°F (175°C). Grease your 8x8 inch pan or line it with parchment paper.
  2. Whisk the pumpkin puree, maple syrup, almond milk, egg, and vanilla in a large bowl. Mix until the color is a consistent orange.
  3. Stir in the rolled oats, pumpkin pie spice, baking powder, and salt. Use a spatula to fold the mixture until no dry pockets remain. Note: Don't over mix or the oats can get gummy.
  4. Fold in the chopped pecans. Ensure they are spread evenly so every slice gets some crunch.
  5. Pour the batter into the pan. Use your spatula to smooth the top into an even layer.
  6. Bake for 40-45 minutes. The center should be slightly puffed and set, while the edges are a deep golden brown.
  7. Remove from the oven. Let the oatmeal cool in the pan for 10 minutes. Note: Cutting too early causes the steam to escape, making the slice collapse.
  8. Slice into 6 equal portions.
