Ingredients:
- 1 cup pumpkin puree
- 1/2 cup pure maple syrup
- 1 cup unsweetened almond milk
- 1 large egg
- 1 tsp vanilla extract
- 2 cups old-fashioned rolled oats
- 1 tbsp pumpkin pie spice
- 1 tsp baking powder
- 1/4 tsp sea salt
- 1/2 cup raw pecans, roughly chopped
Instructions:
- Set your oven to 350°F (175°C). Grease your 8x8 inch pan or line it with parchment paper.
- Whisk the pumpkin puree, maple syrup, almond milk, egg, and vanilla in a large bowl. Mix until the color is a consistent orange.
- Stir in the rolled oats, pumpkin pie spice, baking powder, and salt. Use a spatula to fold the mixture until no dry pockets remain. Note: Don't over mix or the oats can get gummy.
- Fold in the chopped pecans. Ensure they are spread evenly so every slice gets some crunch.
- Pour the batter into the pan. Use your spatula to smooth the top into an even layer.
- Bake for 40-45 minutes. The center should be slightly puffed and set, while the edges are a deep golden brown.
- Remove from the oven. Let the oatmeal cool in the pan for 10 minutes. Note: Cutting too early causes the steam to escape, making the slice collapse.
- Slice into 6 equal portions.
