Ingredients:
- 3 large overripe bananas, mashed (approx. 340g)
- 1/2 cup unsalted butter, melted and cooled (113g)
- 1/2 cup light brown sugar, packed (100g)
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda
- 1/2 tsp fine sea salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 3/4 cup chopped walnuts, lightly toasted (100g)
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, mash the bananas with a fork until mostly smooth. Whisk in the melted butter, brown sugar, egg, and vanilla until the mixture is a uniform, pale gold color.
- In a separate medium bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, and nutmeg.
- Gently fold the dry ingredients into the wet banana mixture using a spatula. Stop as soon as no more streaks of flour are visible to avoid over-mixing.
- Fold in the toasted walnuts. Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs.
