Ingredients:
- 3 large eggs
- 1/2 cup half-and-half
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp fine sea salt
- 8 thick slices banana bread
- 3 tbsp unsalted butter
Instructions:
- Whisk the eggs, half-and-half, vanilla, cinnamon, and salt in a shallow bowl until the mixture is completely homogenous and slightly frothy.
- Heat a skillet over medium-high heat and melt the butter until it begins to foam.
- Dip each slice of banana bread into the custard for no more than 5-8 seconds per side to ensure the surface is saturated but the center remains firm.
- Place the slices in the hot pan and cook for 2-3 minutes per side until a deep mahogany-colored crust forms.
- Add a small knob of extra butter to the pan in the final 30 seconds and spoon the melted butter over the toast for a glossy finish.
