Ingredients:

  • 3 large eggs
  • 1/2 cup half-and-half
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp fine sea salt
  • 8 thick slices banana bread
  • 3 tbsp unsalted butter

Instructions:

  1. Whisk the eggs, half-and-half, vanilla, cinnamon, and salt in a shallow bowl until the mixture is completely homogenous and slightly frothy.
  2. Heat a skillet over medium-high heat and melt the butter until it begins to foam.
  3. Dip each slice of banana bread into the custard for no more than 5-8 seconds per side to ensure the surface is saturated but the center remains firm.
  4. Place the slices in the hot pan and cook for 2-3 minutes per side until a deep mahogany-colored crust forms.
  5. Add a small knob of extra butter to the pan in the final 30 seconds and spoon the melted butter over the toast for a glossy finish.
