Ingredients:
- 1 cup (125g) whole wheat pastry flour
- 1 tsp (5g) baking powder
- 1/2 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) sea salt
- 1 large (120g) overripe banana, mashed
- 1 large (50g) egg
- 1/2 cup (120ml) unsweetened almond milk
- 1 tbsp (15ml) melted coconut oil
- 1 tsp (5ml) pure vanilla extract
- 1 tbsp (21g) honey
Instructions:
- Whisk the whole wheat pastry flour, baking powder, cinnamon, and sea salt in a medium bowl until combined.
- In a separate large bowl, mash the overripe banana into a smooth paste, then whisk in the egg, almond milk, melted coconut oil, vanilla extract, and honey.
- Gently fold the dry ingredients into the wet mixture using a spatula, stirring only until the flour streaks disappear to avoid overmixing.
- Heat a non-stick skillet over medium-low heat and lightly grease with a small amount of butter or oil.
- Pour approximately 1/4 cup (60ml) of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface and the edges appear set and matte.
- Flip the pancakes in one quick motion and cook for another 2-3 minutes until both sides are deep golden brown and the center feels springy.
