Ingredients:

  • 1 large (120g) overripe banana
  • 1/4 cup creamy peanut butter
  • 1 tbsp maple syrup
  • 1 1/2 cups rolled oats
  • 2 tbsp chia seeds
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 1/4 cup mini dark chocolate chips
  • 2 tbsp crushed walnuts

Instructions:

  1. Peel your banana and place it in a medium bowl. Mash it with a fork until it reaches a velvety, lump free consistency. Note: The smoother the mash, the better the balls hold together.
  2. Add the creamy peanut butter and maple syrup to the banana. Stir until the mixture is fully emulsified and glossy.
  3. Pour in the rolled oats. Fold them in gently with a spatula.
  4. Stir in the chia seeds, cinnamon, and sea salt.
  5. Continue mixing until the oats are completely hydrated and the dough feels heavy.
  6. Fold in the mini dark chocolate chips and crushed walnuts. Ensure they're evenly distributed so every bite has a crunch.
  7. Scoop about 1 tablespoon of dough. Roll it between your palms to create a sphere about the size of a golf ball.
  8. Place each ball on your parchment lined sheet.
  9. Move the sheet to the refrigerator. Chill for 20 minutes until the structure feels firm to the touch.
