Ingredients:
- 1 large (120g) overripe banana
- 1/4 cup creamy peanut butter
- 1 tbsp maple syrup
- 1 1/2 cups rolled oats
- 2 tbsp chia seeds
- 1/2 tsp ground cinnamon
- 1/4 tsp sea salt
- 1/4 cup mini dark chocolate chips
- 2 tbsp crushed walnuts
Instructions:
- Peel your banana and place it in a medium bowl. Mash it with a fork until it reaches a velvety, lump free consistency. Note: The smoother the mash, the better the balls hold together.
- Add the creamy peanut butter and maple syrup to the banana. Stir until the mixture is fully emulsified and glossy.
- Pour in the rolled oats. Fold them in gently with a spatula.
- Stir in the chia seeds, cinnamon, and sea salt.
- Continue mixing until the oats are completely hydrated and the dough feels heavy.
- Fold in the mini dark chocolate chips and crushed walnuts. Ensure they're evenly distributed so every bite has a crunch.
- Scoop about 1 tablespoon of dough. Roll it between your palms to create a sphere about the size of a golf ball.
- Place each ball on your parchment lined sheet.
- Move the sheet to the refrigerator. Chill for 20 minutes until the structure feels firm to the touch.
