Ingredients:
- 1.5 cups (150g) graham cracker crumbs
- 4 tbsp (56g) melted unsalted butter
- 2 tbsp (30ml) maple syrup
- 8 oz (225g) light cream cheese, softened
- 0.5 cup (120g) plain non-fat Greek yogurt
- 0.25 cup (60ml) honey
- 1 tsp (5ml) pure vanilla extract
- 1 cup (240ml) heavy whipping cream, chilled
- 3 large (300g) ripe bananas, sliced
- 1 cup (230g) crushed pineapple, drained thoroughly
- 2 cups (480ml) light whipped topping
- 12 (150g) maraschino cherries
- 2 tbsp (30ml) sugar-free dark chocolate drizzle
- 1 tbsp (15ml) fresh lemon juice
Instructions:
- Combine the graham cracker crumbs, melted butter, and maple syrup in a bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9x13-inch pan using the back of a spoon.
- Place the pan in the freezer for 15 minutes to set the crust.
- In a large bowl, beat the softened light cream cheese and Greek yogurt until the texture is smooth.
- Mix in the honey and vanilla extract until fully incorporated.
- In a separate chilled bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture using a spatula to maintain a light, airy volume.
- Spread the cream cheese mousse evenly over the chilled graham crust.
- Toss banana slices in lemon juice, then arrange them in a single layer across the mousse.
- Evenly distribute the drained crushed pineapple over the bananas.
- Spread the light whipped topping over the fruit layer.
- Garnish with maraschino cherries and sugar-free dark chocolate drizzle, then chill for 4 hours before serving.
