Ingredients:

  • 3 large overripe bananas, mashed (approx. 1 ½ cups / 340g)
  • ½ cup (115g) unsalted butter, melted and cooled slightly
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • ¼ tsp (1.5g) salt
  • ½ tsp (1g) ground cinnamon

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, mash the bananas with a fork until mostly smooth. Stir in the melted butter, sugar, beaten egg, and vanilla extract until the mixture is cohesive.
  3. Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture. Using a spatula, gently fold the ingredients together until no streaks of white flour remain.
  4. Pour the batter into the prepared pan and smooth the top.
  5. Bake for 60 to 65 minutes until the crust is deep mahogany-colored and a toothpick inserted into the center comes out with a few moist crumbs.
  6. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack.
