Ingredients:
- 3 large overripe bananas, mashed (approx. 1 ½ cups / 340g)
- ½ cup (115g) unsalted butter, melted and cooled slightly
- ¾ cup (150g) granulated sugar
- 1 large egg, room temperature
- 1 tsp (5ml) pure vanilla extract
- 1 ½ cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- ¼ tsp (1.5g) salt
- ½ tsp (1g) ground cinnamon
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a large bowl, mash the bananas with a fork until mostly smooth. Stir in the melted butter, sugar, beaten egg, and vanilla extract until the mixture is cohesive.
- Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture. Using a spatula, gently fold the ingredients together until no streaks of white flour remain.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 60 to 65 minutes until the crust is deep mahogany-colored and a toothpick inserted into the center comes out with a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes before transferring to a wire rack.
