Ingredients:
- 4 cups fresh or frozen blueberries
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1/2 tsp ground cinnamon
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 3/4 cup whole milk
- 1/2 cup unsalted butter, melted
- 1 tsp vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C).
- In a medium bowl, toss the blueberries with sugar, cornstarch, lemon juice, and cinnamon until evenly coated. Pour the mixture into a 9x9 inch baking dish.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Stir in the milk and vanilla extract until just combined, then fold in the melted butter.
- Spoon the batter evenly over the blueberries without stirring the layers.
- Bake for 50–60 minutes until the edges are bubbling and the topping is deep golden brown and springy to the touch.
