Ingredients:

  • 4 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp ground cinnamon
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3/4 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, toss the blueberries with sugar, cornstarch, lemon juice, and cinnamon until evenly coated. Pour the mixture into a 9x9 inch baking dish.
  3. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  4. Stir in the milk and vanilla extract until just combined, then fold in the melted butter.
  5. Spoon the batter evenly over the blueberries without stirring the layers.
  6. Bake for 50–60 minutes until the edges are bubbling and the topping is deep golden brown and springy to the touch.
