Ingredients:

  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) brown sugar, packed
  • 1 large egg, room temperature
  • ½ cup (120g) mashed overripe banana
  • 1 tsp (5ml) vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • ½ tsp (3g) baking soda
  • ¼ tsp (1.5g) salt
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mash the overripe bananas with a fork until they form a smooth paste with only a few small lumps.
  3. Cream together the softened butter and brown sugar in a large bowl until the mixture looks pale and fluffy.
  4. Beat in the egg, mashed banana, and vanilla extract until combined.
  5. Whisk the flour, baking soda, and salt in a medium bowl.
  6. Stir the dry ingredients into the wet base using a spatula; mix only until no streaks of white flour remain.
  7. Fold in the semi sweet chocolate chips.
  8. Scoop rounded tablespoons of dough onto the sheets, spacing them 2 inches apart.
  9. Bake 10–12 minutes until the edges are golden brown.
