Ingredients:
- ½ cup (115g) unsalted butter, softened
- ½ cup (100g) brown sugar, packed
- 1 large egg, room temperature
- ½ cup (120g) mashed overripe banana
- 1 tsp (5ml) vanilla extract
- 1 ½ cups (190g) all-purpose flour
- ½ tsp (3g) baking soda
- ¼ tsp (1.5g) salt
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Mash the overripe bananas with a fork until they form a smooth paste with only a few small lumps.
- Cream together the softened butter and brown sugar in a large bowl until the mixture looks pale and fluffy.
- Beat in the egg, mashed banana, and vanilla extract until combined.
- Whisk the flour, baking soda, and salt in a medium bowl.
- Stir the dry ingredients into the wet base using a spatula; mix only until no streaks of white flour remain.
- Fold in the semi sweet chocolate chips.
- Scoop rounded tablespoons of dough onto the sheets, spacing them 2 inches apart.
- Bake 10–12 minutes until the edges are golden brown.
