Ingredients:

  • 1 tbsp chipotle peppers in adobo, finely minced
  • 1 tsp adobo sauce
  • 1/4 tsp smoked paprika
  • 1 tbsp fresh lemon juice
  • 1 tbsp capers, drained and minced
  • 1 tsp prepared horseradish
  • 1 tbsp cornichons, finely diced
  • salt to taste
  • black pepper to taste

Instructions:

  1. Finely mince the chipotle peppers, capers, and cornichons into tiny, uniform pieces.
  2. In a small mixing bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, and adobo sauce until the mixture is a uniform, pale orange color and completely smooth.
  3. Gently fold in the minced chipotles, capers, horseradish, and diced cornichons. Finish with smoked paprika, salt, and pepper, stirring until ingredients are evenly suspended.
