Ingredients:

  • 2 cups (280g) frozen mango chunks
  • 1 medium (115g) frozen banana, sliced
  • 1 cup (240ml) full-fat canned coconut milk
  • 1/2 cup (120ml) cold water
  • 1 tbsp (15ml) fresh lime juice
  • 1 tbsp (21g) honey
  • 1/4 tsp (1g) vanilla extract

Instructions:

  1. Layer the ingredients in the blender by adding liquids first: coconut milk, water, lime juice, and vanilla extract.
  2. Add the honey (or maple syrup) to the liquid base.
  3. Place the frozen mango chunks and frozen banana slices on top of the liquids to ensure they are pushed down into the blades.
  4. Start the blender on the lowest setting and quickly increase to high. Blend for 45–60 seconds until the mixture is a uniform, vibrant gold and no frozen lumps remain.
  5. Check the consistency with a spoon. If too thick, add water one tablespoon at a time; if too thin, add 2–3 more frozen mango chunks and pulse until desired thickness is achieved.
