Ingredients:
- 2 cups (280g) frozen mango chunks
- 1 medium (115g) frozen banana, sliced
- 1 cup (240ml) full-fat canned coconut milk
- 1/2 cup (120ml) cold water
- 1 tbsp (15ml) fresh lime juice
- 1 tbsp (21g) honey
- 1/4 tsp (1g) vanilla extract
Instructions:
- Layer the ingredients in the blender by adding liquids first: coconut milk, water, lime juice, and vanilla extract.
- Add the honey (or maple syrup) to the liquid base.
- Place the frozen mango chunks and frozen banana slices on top of the liquids to ensure they are pushed down into the blades.
- Start the blender on the lowest setting and quickly increase to high. Blend for 45–60 seconds until the mixture is a uniform, vibrant gold and no frozen lumps remain.
- Check the consistency with a spoon. If too thick, add water one tablespoon at a time; if too thin, add 2–3 more frozen mango chunks and pulse until desired thickness is achieved.
