Ingredients:

  • 2 anchovy fillets, minced (10g)
  • 1 clove garlic, minced (5g)
  • 1 tsp Worcestershire sauce (5ml)
  • 1/2 cup mayonnaise (115g)
  • 1/3 cup grated Parmesan cheese (30g)
  • 2 tbsp fresh lemon juice (30ml)
  • 1 tsp Dijon mustard (5ml)
  • 1/4 tsp salt (1.5g)
  • 1/4 tsp cracked black pepper (1g)
  • 2 tbsp extra-virgin olive oil (30ml)

Instructions:

  1. Finely mince the garlic and anchovy fillets until they form a smooth paste.
  2. Whisk together the Dijon mustard, lemon juice, and Worcestershire sauce.
  3. While whisking constantly, slowly drizzle in the olive oil in a thin stream until the mixture transforms into a thick, pale gold cream.
  4. Stir in the mayonnaise until smooth.
  5. Fold in the grated Parmesan cheese, salt, and black pepper, whisking until the dressing is velvety and the cheese is fully incorporated.
