- 1 tsp Worcestershire sauce (5ml)
- 1/2 cup mayonnaise (115g)
- 1/3 cup grated Parmesan cheese (30g)
- 2 tbsp fresh lemon juice (30ml)
- 1 tsp Dijon mustard (5ml)
- 1/4 tsp salt (1.5g)
- 1/4 tsp cracked black pepper (1g)
- 2 tbsp extra-virgin olive oil (30ml)
Instructions:
- Finely mince the garlic and anchovy fillets until they form a smooth paste.
- Whisk together the Dijon mustard, lemon juice, and Worcestershire sauce.
- While whisking constantly, slowly drizzle in the olive oil in a thin stream until the mixture transforms into a thick, pale gold cream.
- Stir in the mayonnaise until smooth.
- Fold in the grated Parmesan cheese, salt, and black pepper, whisking until the dressing is velvety and the cheese is fully incorporated.
