Ingredients:

  • 1 lb (450g) lobster meat, cooked and chopped into small chunks
  • 1 cup (60g) Panko breadcrumbs
  • 1 large (50g) egg, beaten
  • 3 tbsp (45g) mayonnaise
  • 1 tsp (5g) Old Bay seasoning
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tbsp (15g) fresh parsley, finely chopped
  • 1/4 tsp (1.5g) salt
  • 1/4 tsp (1.5g) black pepper
  • 2 tbsp (30ml) olive oil or avocado oil spray

Instructions:

  1. In a large bowl, combine the chopped lobster, Panko, beaten egg, mayonnaise, Old Bay, lemon juice, parsley, salt, and pepper. Gently fold the ingredients together using a spatula, ensuring lobster chunks remain intact.
  2. Scoop approximately 2-3 tablespoons of the mixture and gently form it into a patty roughly 1 inch (2.5cm) thick. Ensure all patties are uniform in size for even cooking.
  3. Preheat the air fryer to 375°F (190°C). Lightly spray the air fryer basket or parchment paper with oil.
  4. Place the cakes in a single layer in the basket, leaving at least one inch of space between each. Spray the tops of the cakes with oil to promote browning.
  5. Cook for 10 minutes, flipping halfway through, until the cakes develop a deep mahogany-colored crust.
