Ingredients:

  • 3 cups (375g) all-purpose flour
  • 1 ½ cups (300g) granulated sugar
  • 1 tsp (5g) baking soda
  • ½ tsp (3g) salt
  • 1 ½ cups (345g) mashed overripe bananas
  • ½ cup (115g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • ½ cup (120ml) sour cream
  • 8 oz (225g) full-fat cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • 1 tsp (5ml) vanilla extract
  • 1 tbsp (15ml) heavy cream

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan with butter and lightly dust with flour.
  2. Mash the overripe bananas in a small bowl until smooth.
  3. In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking soda, and salt until combined.
  4. In a large bowl, beat the melted butter, eggs, vanilla extract, sour cream, and mashed bananas until the mixture is smooth and pale.
  5. Gently fold the dry ingredients into the wet mixture using a spatula until no streaks of flour remain, taking care not to over-mix.
  6. Pour the batter into the prepared pan and bake for 45 minutes or until a toothpick comes out clean.
  7. Transfer the cake to a wire cooling rack and allow it to cool completely for 2 hours.
  8. Prepare the frosting by beating the softened cream cheese and softened butter together until smooth.
  9. Mix in the powdered sugar and vanilla extract. Stir in heavy cream if needed to reach desired consistency.
  10. Spread the frosting evenly over the cooled cake and slice into 24 servings.
