Ingredients:
- 3 cups (375g) all-purpose flour
- 1 ½ cups (300g) granulated sugar
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 ½ cups (345g) mashed overripe bananas
- ½ cup (115g) unsalted butter, melted and cooled
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- ½ cup (120ml) sour cream
- 8 oz (225g) full-fat cream cheese, softened
- ½ cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1 tbsp (15ml) heavy cream
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan with butter and lightly dust with flour.
- Mash the overripe bananas in a small bowl until smooth.
- In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking soda, and salt until combined.
- In a large bowl, beat the melted butter, eggs, vanilla extract, sour cream, and mashed bananas until the mixture is smooth and pale.
- Gently fold the dry ingredients into the wet mixture using a spatula until no streaks of flour remain, taking care not to over-mix.
- Pour the batter into the prepared pan and bake for 45 minutes or until a toothpick comes out clean.
- Transfer the cake to a wire cooling rack and allow it to cool completely for 2 hours.
- Prepare the frosting by beating the softened cream cheese and softened butter together until smooth.
- Mix in the powdered sugar and vanilla extract. Stir in heavy cream if needed to reach desired consistency.
- Spread the frosting evenly over the cooled cake and slice into 24 servings.
