Ingredients:

  • 1 cup (150g) frozen cauliflower rice
  • 1 medium (115g) frozen banana, broken into chunks
  • 2 tbsp (15g) unsweetened cocoa powder
  • 1 tbsp (16g) creamy peanut butter
  • 1 date (7g) pitted
  • 3/4 cup (180ml) unsweetened almond milk
  • 1/2 tsp (2.5ml) vanilla extract
  • 1 pinch (1g) sea salt

Instructions:

  1. Add ingredients to the blender in the following order: pour in the almond milk and vanilla extract, followed by the cocoa powder, peanut butter, and pitted date.
  2. Add the frozen cauliflower rice and frozen banana chunks on top of the liquid and powder base.
  3. Start the blender on the lowest setting and quickly increase to high. Blend for 45–60 seconds until the mixture is a uniform mahogany color with no visible cauliflower specks.
  4. Check consistency. If too thick, blend in an additional 1 tbsp (15ml) of almond milk. For a thicker smoothie bowl consistency, add 2-3 frozen cauliflower florets and blend again.
