Ingredients:

  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract
  • 2 cups oat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 4 oz low-fat cream cheese
  • 1/4 cup Greek yogurt
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract

Instructions:

  1. In a large bowl, whisk together pumpkin puree, eggs, maple syrup, oil, and vanilla until smooth.
  2. Sift in the oat flour, baking soda, cinnamon, pumpkin pie spice, and salt, then fold gently with a spatula until just combined.
  3. Line a 9x9 inch square baking pan with parchment paper and pour in the batter, smoothing the top.
  4. Bake at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  5. Allow the bars to cool completely in the pan.
  6. Prepare the frosting by mixing softened low-fat cream cheese, Greek yogurt, maple syrup, and vanilla; spread evenly over the cooled bars.
