Ingredients:
- 1 cup pumpkin puree
- 2 large eggs
- 1/2 cup maple syrup
- 1/4 cup coconut oil
- 1 tsp vanilla extract
- 2 cups oat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1/4 tsp salt
- 4 oz low-fat cream cheese
- 1/4 cup Greek yogurt
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
Instructions:
- In a large bowl, whisk together pumpkin puree, eggs, maple syrup, oil, and vanilla until smooth.
- Sift in the oat flour, baking soda, cinnamon, pumpkin pie spice, and salt, then fold gently with a spatula until just combined.
- Line a 9x9 inch square baking pan with parchment paper and pour in the batter, smoothing the top.
- Bake at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely in the pan.
- Prepare the frosting by mixing softened low-fat cream cheese, Greek yogurt, maple syrup, and vanilla; spread evenly over the cooled bars.
