Ingredients:

  • 3 cups (300g) instant mashed potato flakes
  • 3 cups (710ml) hot water
  • 1/2 cup (120ml) whole milk
  • 4 tbsp (56g) unsalted butter
  • 1 tsp (6g) salt
  • 1/2 tsp (3g) MSG or chicken bouillon powder
  • 4 tbsp (56g) unsalted butter
  • 4 tbsp (32g) all-purpose flour
  • 3 cups (710ml) low-sodium chicken stock
  • 1 tsp (3g) onion powder
  • 1 tsp (3g) garlic powder
  • 1/2 tsp (1g) cracked black pepper

Instructions:

  1. Heat water, milk, and butter together in a pot until the butter is fully melted and the liquid is steaming.
  2. Stir in the potato flakes, salt, and MSG or chicken bouillon powder.
  3. Stir gently for 30 seconds until the mixture is smooth and velvety; keep covered to retain heat.
  4. Melt butter in a saucepan over medium heat until it begins to foam.
  5. Whisk in the flour and cook for 2–3 minutes, stirring constantly until the paste turns a light golden brown.
  6. Slowly pour in the chicken stock while whisking vigorously to prevent lumps.
  7. Stir in the onion powder, garlic powder, and black pepper.
  8. Simmer for 5–7 minutes, stirring occasionally, until the gravy reaches a glossy, mahogany-colored consistency.
