Ingredients:
- 3 cups (300g) instant mashed potato flakes
- 3 cups (710ml) hot water
- 1/2 cup (120ml) whole milk
- 4 tbsp (56g) unsalted butter
- 1 tsp (6g) salt
- 1/2 tsp (3g) MSG or chicken bouillon powder
- 4 tbsp (56g) unsalted butter
- 4 tbsp (32g) all-purpose flour
- 3 cups (710ml) low-sodium chicken stock
- 1 tsp (3g) onion powder
- 1 tsp (3g) garlic powder
- 1/2 tsp (1g) cracked black pepper
Instructions:
- Heat water, milk, and butter together in a pot until the butter is fully melted and the liquid is steaming.
- Stir in the potato flakes, salt, and MSG or chicken bouillon powder.
- Stir gently for 30 seconds until the mixture is smooth and velvety; keep covered to retain heat.
- Melt butter in a saucepan over medium heat until it begins to foam.
- Whisk in the flour and cook for 2–3 minutes, stirring constantly until the paste turns a light golden brown.
- Slowly pour in the chicken stock while whisking vigorously to prevent lumps.
- Stir in the onion powder, garlic powder, and black pepper.
- Simmer for 5–7 minutes, stirring occasionally, until the gravy reaches a glossy, mahogany-colored consistency.
