Ingredients:
- salmon fillets, center-cut
- kosher salt
- coarse black pepper
- neutral oil
- pure Grade A maple syrup
- low-sodium soy sauce
- apple cider vinegar
- garlic, minced
- fresh ginger, grated
- smoked paprika
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper or a silicone mat.
- In a small saucepan over medium heat, whisk together the maple syrup, soy sauce, apple cider vinegar, minced garlic, grated ginger, and smoked paprika. Simmer for 3–5 minutes until the mixture reduces by about a third and thickens enough to coat the back of a spoon.
- Pat the salmon fillets completely dry with paper towels. Brush the tops lightly with neutral oil and season evenly with salt and black pepper. Place the fillets skin-side down on the prepared baking sheet.
- Brush half of the reduced maple glaze generously over the tops of the fillets. Bake in the preheated oven for 8 minutes.
- Remove the pan from the oven and brush the remaining glaze over the salmon. Return to the oven and bake for an additional 4–7 minutes, or until the internal temperature reaches 145°F (63°C) and the glaze is caramelized.
