Ingredients:
- 3 large ripe bananas, mashed (approx. 12 oz / 340g)
- 1/2 cup (115g) unsalted butter, melted and cooled
- 1/2 cup (100g) brown sugar, packed
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 cup (90g) rolled oats
- 1 cup (125g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 9x5 inch loaf pan and line the bottom with parchment paper.
- In a large bowl, whisk the melted butter and brown sugar until smooth.
- Stir in the mashed bananas, egg, and vanilla extract until the mixture is velvety and well combined.
- Gently stir in the rolled oats. Note: Let them sit for 2 minutes to hydrate so they don't stay grainy.
- Sift in the flour, baking soda, salt, and cinnamon.
- Use a spatula to fold the ingredients together until no streaks of flour remain. Note: Stop mixing immediately to avoid a tough loaf.
- Pour the batter into the pan.
- Bake 55 mins until the top is deep golden brown and a toothpick comes out with a few moist crumbs.
