Ingredients:

  • 1 lb boneless skinless chicken breasts, sliced into strips
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 large 10-inch flour tortillas
  • 4 cups romaine lettuce, chopped
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup Caesar dressing
  • 1 tbsp fresh lemon juice
  • 1 cup cherry tomatoes, halved
  • 2 tbsp unsalted butter, melted
  • 1/4 cup extra Parmesan cheese

Instructions:

  1. Season chicken strips with garlic powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat.
  2. Press the chicken strips into the grated Parmesan cheese, then place them in the pan. Sear for 3-5 minutes per side until the cheese forms a golden-brown crust and chicken is cooked through. Remove and let rest for 2 minutes.
  3. In a large bowl, toss the chopped romaine lettuce and cherry tomatoes with the Caesar dressing and lemon juice until evenly coated.
  4. Lay tortillas flat. Place a handful of dressed greens in the center, top with the warm parmesan-crusted chicken and a sprinkle of shredded Parmesan.
  5. Fold the sides of the tortilla inward and roll tightly.
  6. Heat a clean skillet over medium heat. Lightly brush the seam-side of the wrap with melted butter and sprinkle a pinch of Parmesan cheese directly onto the pan.
  7. Place the wrap seam-side down onto the cheese. Press firmly for 1-2 minutes until the cheese melts and seals the wrap shut.
