Ingredients:

  • 2 large eggs
  • 1/2 cup pumpkin purée
  • 1/2 cup half-and-half
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 8 thick slices Challah or Brioche bread (approx. 1 lb)
  • 2 tbsp unsalted butter

Instructions:

  1. In a shallow bowl, whisk the eggs and pumpkin purée together until completely smooth.
  2. Gradually whisk in the half-and-half, maple syrup, vanilla, and spices until the batter is a uniform orange hue.
  3. Place bread slices into the batter, pressing down gently. Flip the slices after 30 seconds to ensure full saturation.
  4. Melt butter in a skillet over medium heat until it begins to foam.
  5. Add the soaked slices to the skillet and cook for 3–4 minutes per side until a deep mahogany-colored crust forms.
