Ingredients:
- 2 large eggs
- 1/2 cup pumpkin purée
- 1/2 cup half-and-half
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 8 thick slices Challah or Brioche bread (approx. 1 lb)
- 2 tbsp unsalted butter
Instructions:
- In a shallow bowl, whisk the eggs and pumpkin purée together until completely smooth.
- Gradually whisk in the half-and-half, maple syrup, vanilla, and spices until the batter is a uniform orange hue.
- Place bread slices into the batter, pressing down gently. Flip the slices after 30 seconds to ensure full saturation.
- Melt butter in a skillet over medium heat until it begins to foam.
- Add the soaked slices to the skillet and cook for 3–4 minutes per side until a deep mahogany-colored crust forms.
