Ingredients:
- 2 cups (240g) whole wheat flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- ½ tsp (3g) salt
- 2 tsp (6g) pumpkin pie spice
- 1 cup (245g) 100% pure pumpkin purée
- ½ cup (170g) honey
- ½ cup (120ml) neutral oil
- 2 large eggs
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat your oven to 375°F (190°C) and line a 12-cup standard muffin tin with paper liners.
- In a medium bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and pumpkin pie spice until uniform and no large clumps remain.
- In a large bowl, beat the pumpkin purée, honey, oil, eggs, and vanilla extract until the mixture is smooth and velvety.
- Create a well in the center of the dry ingredients and pour in the pumpkin mixture. Using a rubber spatula, fold the batter together gently until no more streaks of dry flour are visible.
- Divide the batter evenly among the prepared muffin liners and bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
