Ingredients:

  • 2 cups (240g) whole wheat flour
  • 1 tsp (5g) baking soda
  • 1 tsp (5g) baking powder
  • ½ tsp (3g) salt
  • 2 tsp (6g) pumpkin pie spice
  • 1 cup (245g) 100% pure pumpkin purée
  • ½ cup (170g) honey
  • ½ cup (120ml) neutral oil
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a 12-cup standard muffin tin with paper liners.
  2. In a medium bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and pumpkin pie spice until uniform and no large clumps remain.
  3. In a large bowl, beat the pumpkin purée, honey, oil, eggs, and vanilla extract until the mixture is smooth and velvety.
  4. Create a well in the center of the dry ingredients and pour in the pumpkin mixture. Using a rubber spatula, fold the batter together gently until no more streaks of dry flour are visible.
  5. Divide the batter evenly among the prepared muffin liners and bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
