Ingredients:
- 1 cup (245g) Pumpkin puree (unsweetened)
- 1/2 cup (120g) Greek yogurt, plain non-fat
- 2 large (100g) Eggs
- 3 tbsp (45ml) Maple syrup
- 1 tsp (5ml) Vanilla extract
- 3/4 cup (90g) Protein powder
- 1/2 cup (45g) Oat flour
- 1 tsp (5g) Pumpkin pie spice
- 1 tsp (5g) Baking powder
- 1/4 tsp (1g) Salt
- 1/4 cup (30g) Dark chocolate chips
- 2 tbsp (15g) Crushed walnuts
Instructions:
- Preheat the oven to 350°F (175°C) and grease an 8x8 inch baking pan with non-stick spray or parchment paper.
- In a large mixing bowl, whisk together the pumpkin puree, Greek yogurt, eggs, maple syrup, and vanilla extract until the batter is smooth and uniform in color.
- Sift in the protein powder, oat flour, pumpkin pie spice, baking powder, and salt.
- Using a silicone spatula, gently fold the dry ingredients into the wet base. Stop mixing immediately once no dry streaks remain to avoid a rubbery texture.
- Fold in the dark chocolate chips and crushed walnuts if using.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 22–25 minutes, or until the edges pull slightly away from the sides and the center springs back when lightly touched.
- Remove from the oven and let it cool in the pan for 5 minutes.
