Ingredients:
- 3 cups (375g) all-purpose flour
- 2 cups (400g) granulated sugar
- 1 tbsp (15g) baking powder
- ½ tsp (3g) salt
- 1 cup (225g) unsalted butter, softened
- 4 large eggs, room temperature
- 1 cup (240ml) whole milk
- 2 tsp (10ml) vanilla extract
- 1 cup (225g) unsalted butter, softened
- 4 cups (500g) powdered sugar
- 3 tbsp (45ml) heavy cream
- 1 tsp (5ml) vanilla extract
- 4 oz (115g) white fondant
- 1 tube of black decorating icing
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x13 inch pan or line it with parchment paper.
- Cream together softened butter and sugar until pale and fluffy, approximately 3 minutes.
- Beat in eggs one at a time, then stir in the vanilla extract.
- Gradually add flour, baking powder, and salt, alternating with the milk; mix until just combined.
- Pour batter into the pan and bake for 20 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Place the cake in the fridge for 30 minutes before frosting to lock in moisture.
- Whip butter until smooth, then slowly incorporate powdered sugar, heavy cream, and vanilla.
- Divide frosting into two bowls: tint one light blue and leave the other white.
- Spread a thick layer of white frosting over the cake using an offset spatula.
- Pipe a blue frosting border and place white fondant nurse's cap and stethoscope shapes in the center.
- Use black icing to write a congratulatory message in script.
