Ingredients:

  • 3 cups (375g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • 1 tbsp (15g) baking powder
  • ½ tsp (3g) salt
  • 1 cup (225g) unsalted butter, softened
  • 4 large eggs, room temperature
  • 1 cup (240ml) whole milk
  • 2 tsp (10ml) vanilla extract
  • 1 cup (225g) unsalted butter, softened
  • 4 cups (500g) powdered sugar
  • 3 tbsp (45ml) heavy cream
  • 1 tsp (5ml) vanilla extract
  • 4 oz (115g) white fondant
  • 1 tube of black decorating icing

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x13 inch pan or line it with parchment paper.
  2. Cream together softened butter and sugar until pale and fluffy, approximately 3 minutes.
  3. Beat in eggs one at a time, then stir in the vanilla extract.
  4. Gradually add flour, baking powder, and salt, alternating with the milk; mix until just combined.
  5. Pour batter into the pan and bake for 20 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Place the cake in the fridge for 30 minutes before frosting to lock in moisture.
  8. Whip butter until smooth, then slowly incorporate powdered sugar, heavy cream, and vanilla.
  9. Divide frosting into two bowls: tint one light blue and leave the other white.
  10. Spread a thick layer of white frosting over the cake using an offset spatula.
  11. Pipe a blue frosting border and place white fondant nurse's cap and stethoscope shapes in the center.
  12. Use black icing to write a congratulatory message in script.
