Ingredients:
- 4 (6 oz / 170 g) boneless skinless chicken breasts
- 1/3 cup (80 g) mayonnaise
- 1/2 cup (50 g) grated Parmesan cheese
- 1 tsp (2 g) garlic powder
- 1/2 tsp (3 g) salt
- 1 cup (100 g) Italian bread crumbs
- 1 tsp (2 g) dried oregano
- 1/4 tsp (1 g) black pepper
Instructions:
- Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
- Use a meat mallet to pound the thickest part of each chicken breast until they are an even thickness of approximately 3/4 inch.
- In a shallow bowl, whisk together the mayonnaise, Parmesan cheese, garlic powder, and salt.
- Pat the chicken breasts dry with a paper towel, then coat each piece generously with the mayonnaise mixture, ensuring full coverage.
- In a second shallow bowl, combine the Italian bread crumbs, dried oregano, and black pepper.
- Press each coated chicken breast firmly into the bread crumbs to create a thick, even layer on both sides.
- Arrange the chicken on the prepared baking sheet and bake for 15–20 minutes, or until the internal temperature reaches 165°F (74°C) and the crust is mahogany-colored.
- Remove from the oven and let the chicken rest for 5 minutes before serving.
