Ingredients:

  • 1 cup (225g) unsalted butter, melted and slightly cooled
  • ½ cup (120ml) vegetable oil
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1 can (15 oz / 425g) pumpkin puree
  • 2 tsp (10ml) vanilla extract
  • 3 cups (375g) all-purpose flour
  • 1 tbsp (15g) baking soda
  • 1 tsp (6g) salt
  • 1 tbsp (8g) ground cinnamon
  • 1 tsp (2g) ground nutmeg
  • ½ tsp (1g) ground cloves
  • 1 cup (115g) chopped walnuts
  • 1 cup (150g) raisins or dried cranberries

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease two 9x5 inch loaf pans.
  2. In a large bowl, whisk together the melted butter, oil, and sugar until smooth.
  3. Add the eggs one at a time, beating well after each addition, then stir in the pumpkin puree and vanilla extract until the mixture is velvety and uniform.
  4. Sift the flour, baking soda, salt, cinnamon, nutmeg, and cloves directly into the wet ingredients.
  5. Using a spatula, fold the mixture together gently until no more streaks of dry flour are visible; do not over-mix.
  6. Fold in the chopped walnuts and raisins.
  7. Divide the batter evenly between the two prepared pans.
  8. Bake for 50–60 minutes, or until a skewer inserted into the center comes out clean or with a few moist crumbs.
  9. Allow the loaves to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
