Ingredients:
- 1 cup (225g) unsalted butter, melted and slightly cooled
- ½ cup (120ml) vegetable oil
- 2 cups (400g) granulated sugar
- 4 large eggs, room temperature
- 1 can (15 oz / 425g) pumpkin puree
- 2 tsp (10ml) vanilla extract
- 3 cups (375g) all-purpose flour
- 1 tbsp (15g) baking soda
- 1 tsp (6g) salt
- 1 tbsp (8g) ground cinnamon
- 1 tsp (2g) ground nutmeg
- ½ tsp (1g) ground cloves
- 1 cup (115g) chopped walnuts
- 1 cup (150g) raisins or dried cranberries
Instructions:
- Preheat your oven to 350°F (175°C) and grease two 9x5 inch loaf pans.
- In a large bowl, whisk together the melted butter, oil, and sugar until smooth.
- Add the eggs one at a time, beating well after each addition, then stir in the pumpkin puree and vanilla extract until the mixture is velvety and uniform.
- Sift the flour, baking soda, salt, cinnamon, nutmeg, and cloves directly into the wet ingredients.
- Using a spatula, fold the mixture together gently until no more streaks of dry flour are visible; do not over-mix.
- Fold in the chopped walnuts and raisins.
- Divide the batter evenly between the two prepared pans.
- Bake for 50–60 minutes, or until a skewer inserted into the center comes out clean or with a few moist crumbs.
- Allow the loaves to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
