Ingredients:

  • 3 cups (375g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (225g) unsalted butter, softened and cubed
  • 3 large (150g) eggs, room temperature
  • 1 cup (240ml) buttermilk, room temperature
  • 2 tsp (10ml) pure vanilla extract
  • 2 cups (450g) unsalted butter, softened
  • 6 cups (720g) powdered sugar, sifted
  • 3 tbsp (45ml) heavy cream
  • 1 tsp (5ml) vanilla extract
  • 1g salt
  • gel food coloring
  • 4 oz (115g) white fondant
  • 1 tube (30g) black decorating gel

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan and line it with parchment paper.
  2. In a mixing bowl, combine all-purpose flour, granulated sugar, baking powder, and salt.
  3. Add cubed butter and beat on low speed until the mixture resembles coarse sand.
  4. Gradually beat in eggs one by one, then stir in buttermilk and vanilla extract until the batter is smooth and glossy.
  5. Pour batter into the prepared pan, smooth the top with a spatula, and bake for 25–30 minutes until a toothpick inserted in the center comes out with a few moist crumbs.
  6. Allow the cake to cool completely in the pan.
  7. Prepare buttercream by mixing softened butter, powdered sugar, heavy cream, vanilla, and salt. Apply a thin crumb coat to the cake and chill for 30 minutes.
  8. Apply the final layer of frosting. Tint a portion of the frosting teal or blue to pipe a V-neck shape.
  9. Roll out white fondant to create a nurse's cap and pill shapes. Use black decorating gel to pipe a stethoscope outline and write 'Congrats RN!' in the center.
