Ingredients:
- 3 cups (375g) all-purpose flour
- 2 cups (400g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (225g) unsalted butter, softened and cubed
- 3 large (150g) eggs, room temperature
- 1 cup (240ml) buttermilk, room temperature
- 2 tsp (10ml) pure vanilla extract
- 2 cups (450g) unsalted butter, softened
- 6 cups (720g) powdered sugar, sifted
- 3 tbsp (45ml) heavy cream
- 1 tsp (5ml) vanilla extract
- 1g salt
- gel food coloring
- 4 oz (115g) white fondant
- 1 tube (30g) black decorating gel
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan and line it with parchment paper.
- In a mixing bowl, combine all-purpose flour, granulated sugar, baking powder, and salt.
- Add cubed butter and beat on low speed until the mixture resembles coarse sand.
- Gradually beat in eggs one by one, then stir in buttermilk and vanilla extract until the batter is smooth and glossy.
- Pour batter into the prepared pan, smooth the top with a spatula, and bake for 25–30 minutes until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the cake to cool completely in the pan.
- Prepare buttercream by mixing softened butter, powdered sugar, heavy cream, vanilla, and salt. Apply a thin crumb coat to the cake and chill for 30 minutes.
- Apply the final layer of frosting. Tint a portion of the frosting teal or blue to pipe a V-neck shape.
- Roll out white fondant to create a nurse's cap and pill shapes. Use black decorating gel to pipe a stethoscope outline and write 'Congrats RN!' in the center.
