Ingredients:
- 4 boneless, skinless chicken breasts (approx. 6 oz / 170g each)
- 1 tbsp olive oil
- 1 tsp sea salt
- ½ tsp cracked black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp onion powder
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Place the chicken breasts between two sheets of plastic wrap and lightly pound the thickest part with a meat mallet until they are an even thickness.
- Pat the chicken breasts completely dry with paper towels.
- In a small mixing bowl, combine the sea salt, cracked black pepper, garlic powder, smoked paprika, and onion powder.
- Rub each chicken breast with olive oil, then coat generously with the prepared seasoning blend on all sides.
- Place the chicken on the baking sheet and roast for 18–22 minutes, or until the internal temperature reaches 165°F (74°C).
- Transfer the chicken to a plate and let the meat rest for 5–10 minutes before slicing to allow juices to redistribute.
