Ingredients:

  • 4 boneless, skinless chicken breasts (approx. 6 oz / 170g each)
  • 1 tbsp olive oil
  • 1 tsp sea salt
  • ½ tsp cracked black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp onion powder

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Place the chicken breasts between two sheets of plastic wrap and lightly pound the thickest part with a meat mallet until they are an even thickness.
  3. Pat the chicken breasts completely dry with paper towels.
  4. In a small mixing bowl, combine the sea salt, cracked black pepper, garlic powder, smoked paprika, and onion powder.
  5. Rub each chicken breast with olive oil, then coat generously with the prepared seasoning blend on all sides.
  6. Place the chicken on the baking sheet and roast for 18–22 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Transfer the chicken to a plate and let the meat rest for 5–10 minutes before slicing to allow juices to redistribute.
